Lemon cheesecake

Ingredients:

  • one and a half cups of biscuits or biscuit dough – if you want a really diet cookie, graham cracker dough
  • 3 tablespoons butter
  • 2 lemons juice and grated zest
  • 1½ teaspoons gelatin powder
  • 1 cup of non-fat cottage cheese
  • half cup brown sugar
  • 2 eggs

Grease a round baking dish about 20 cm in diameter. Crush the biscuits, if you bought them whole, into fine crumbs using a food processor or chopper. Melt the butter and stir in the crumbs.

Place in the baking tin and press down well. Put the tin in the fridge. To make the lemon and curd layer, put the lemon zest and lemon juice in a bowl and stir in the gelatine. Heat the mixture slowly, wait for the gelatine to melt and then leave to cool. In another bowl, mix the cottage cheese and sugar, then add the separated egg yolks and gelatine mixture. Beat the egg whites and gently fold them into the cottage cheese mixture. Put it on top of the biscuit base, smooth it out and put it in the fridge for about 2 hours. Once set, remove from the tin and serve sliced.

Christmas orange pudding

Ingredients:

  • 10 dkg brown sugar
  • 6 eggs
  • 6 oranges
  • 1 tablespoon of cornstarch

Wash 5 oranges, squeeze out the juice and mix with the sugar and starch. Put on the fire and stir continuously until thickened. Then remove from the heat, beat in the remaining four eggs and pour in the beaten egg yolks. Allow to thicken a little, then pour into a custard dish and cook over steam until it becomes jelly-like. When cool, turn out onto a plate and serve garnished with orange rings.

Stuffed apples

Ingredients:

  • 5 apples
  • 1 lemon
  • 20 dkg low-fat cottage cheese
  • 2-3 tablespoons brown sugar
  • 1 pinch of cinnamon

Grate the zest from the lemon and squeeze out the juice. Peel the apples, cut in half and remove the core. Cook the apples in boiling water for 5 minutes and then cool. Mix the cottage cheese with the cinnamon, lemon zest and sugar and pour into the apples. Put in the fridge for an hour or two. Serve cold.

Christmas Cinnamon Star

Ingredients:

  • 250 g wholemeal flour
  • 15 dkg butter
  • 1 tablespoon grated orange zest
  • 1 teaspoon of cinnamon
  • 7 dkg brown sugar

Put the flour and butter in a bowl and mix together. Mix the other ingredients, add 2 tablespoons of water and form the dough into a dumpling. Put the dough on a stretching board and roll out to a thickness of about 2-3 mm. Using a star shape, cut as many cakes as you can from the dough. Place the stars on a baking sheet covered with baking paper and bake until golden brown. Sprinkle the finished stars with a little cinnamon.
